CM Red Fruits took home the gold medal for Espresso at the 2023 international Golden Bean roasting competition — and also earned a bronze for Filter. So whether pulling a shot or making a pour-over, this bean will shine!
What makes this bean truly special is the processing method that famed grower Edwin Noreña performs. First, cherries are soaked in water for four hours, then undergo carbonic maceration for 72 hours with mossto (residual crushed cherry pulp). Followed by a parchment carbonic maceration for 72 hours with mossto, red fruits, and wine yeast. Coffee is then sun-dried for about 25 days.
